“You gonna put frosting on that?”

On Friday I made a public threat on Facebook, about a baking marathon, that I didn’t really make good on over the weekend. I did bake one cake, an old favorite Real Simple recipe for applesauce spice cake.

You can swap out the raisins for cranberries if raisins in baked goods aren’t your bag. You can also use regular applesauce if you can’t find chunky applesauce (hello, Hannaford?). The cake should take 10 or 15 minutes to assemble, but be careful to test the center before you remove it from the oven–I made this once for work and cut into it at the office to find the middle a little underdone.

It is very good, even without frosting.
